Simple Salmon Stir-fry Recipe This is such a simple, speedy recipe for you today. If the other half is out I like to find something quick to whip up that is easy to make for one. This is a favourite recipe of mine at the moment – I’m one of those people who becomes obsessed with a meal and eats it until I become sick of it. Not at that stage yet, and actually I can’t wait to have this tonight for my dinner! But I’m sure I’ll find something new soon to replace it when I do though.

I find it hard to cook for just myself without having left over ingredients that go to waste. This dish uses store cupboard staples and ingredients that can be used in many other dishes later in the week. Obviously you can make this for other people too, just double/triple the ingredients as you need. Also, this is packed with loads of veg and up there in the healthy dinner category.

This is such a quick meal to cook so make sure you have all your ingredients chopped and ready to go before you start cooking. You don’t want dry, overcooked salmon! I’ve done it and it’s not so nice.

Ingredients
– 1 x salmon fillet
– A bunch of spring onions
– 1 x pak choi, sliced
– 4 x large florets of broccoli, sliced
– 2 x garlic cloves, finely chopped
– 1 x pack of add straight to wok noodles or I sometimes use soba noodles
– 2 tbsp dark soy
– 2 tbsp sesame oil
– 1 tbsp light agave
– 1 x lime
– Chilli, finely sliced – as much as you like depending on how hot you like it. Red chilli or scotch bonnets

If you are using soba noodles, get the water boiling and get them on to cook whilst you make the stir-fry. Add the oil to a frying pan and get it nice and hot. Add the salmon skin side down. Let it start to crisp and then turn to a medium heat. Add the broccoli and cook for a minute or two.

Then add the chilli, garlic and spring onions and at this point flip your salmon. Add the pak choi, soy and agave and stir. Let it all cook for another minute. Break up the salmon using your spatular and if you are using straight to wok noodles add them now. After a couple of minutes the noodles should be done. Squeeze the juice of half a lime (more if you like) into the pan and then serve straight away.

If you have used soba noodles, once you have broken up your salmon add the drained noodles, stir and serve. Isn’t this the quickest meal ever! It’s such a fresh and light meal and so tasty too.

      It is! Unfortunately, my husband doesn’t like them so I only get to eat them when he’s out!
