Sweet potato fries and fresh guacamole
I wasn’t even planning to blog about this simple recipe for sweet potato fries and fresh guacamole, but when I posted this photo I got asked a couple of times if I would be sharing it. So here it is!

I am literally OBSESSED with sweet potato at the moment. I’ve been experimenting lots with it – even tried to make some crisps! I think after months of just feeding my body all the food, and mainly all the naughty food, I’m craving good, fresh and nutritious food. But sweet potato fries seem to bridge that gap between the healthy stuff I should eat and all the naughty stuff I want to eat!

I mean yes I will always eat pizza and drink one too many cocktails but since the sun has begun to make an appearance, it has reminded me summer may actually come this year and yes I will have to stop wearing all the layers. Every winter I forget how good healthy and nutritious food makes me feel and when I throw in a little exercise with that I feel like Wonder Woman!!

But during the winter months I go into hermit mode and there is nothing or no one who can stop me. This is one of the reasons I keep telling my husband we need to live in sunnier climates from November through to March. Need my vitamin D!! Ha. Anyway, one can dream…

Let’s get back to the food! I do not know how many times I have tried to make sweet potato fries after seeing them all over my Instagram and failed to get anything other than a soggy potato. Like so many times. Well, I think I’ve found a way to get some crisp into those fries! Do not over oil. I always thought the more oil the more likely they were to get nice and crispy. No no no. It makes them wet and soggy. The trick is as little oil as possible and a good non-stick metal oven tray that has space for all your potato to be one layer thick. Since I’ve made them like this the outcome is so much better!

Serves 1

Sweet potato fries
– 1 large sweet potato
– 1/2 tsp coconut oil, softened
– Sprinkle of cayenne pepper
– Salt & pepper

Guacamole
– 1 ripe avocado
– 1 tomato, chopped
– 4 spring onions, sliced
– 1/2 lime
– 1 red chilli, chopped finely
– Handful of coriander, chopped
– Salt & pepper

Method

Before you do anything get your oven on and pre-heating at 200c. You want the oven at temperature before you add in your sweet potato.

Put your metal tray into the oven, without anything in it. Let it heat up whilst you chop the potato.

Peel your sweet potato and then cut into fries. Make sure you cut them the same size, nice and evenly. This is really important otherwise they won’t cook evenly and you’ll burn some or some will be undercooked.

Get the tray out the oven carefully, then add the sweet potato. Drizzle over the coconut oil, a sprinkle of cayenne pepper, a good grind of pepper and pinch of sea salt. Give it a good mix to make sure the potato is coated. Then place back into the oven for 10 minutes at 200c.

After 10 minutes, give the tray a shake so the sweet potato doesn’t stick. Then back in for another 10 minutes.

Now I make the guacamole! Peel and de-stone the avocado, cut into cubes and add to a bowl. Then add the chopped tomato, sliced spring onions, finely chopped chilli, coriander, juice of 1/2 a lime. Mash it up with a fork and mix together. I like to keep some texture and don’t like my guacamole smooth. But this is up to you, mash up as much or as little as you like. Then add salt and pepper to taste.

Keep an eye on the sweet potato, you don’t want them to burn! I often give the tray a few shuffles to make sure the fries don’t stick and they cook evenly. Once they are nicely brown remove them from the oven.

Serve the sweet potato fries and fresh guacamole in a big bowl and enjoy!
