A super easy and quick courgetti recipe that takes just 20 minutes to make, making it a perfect mid-week dinner.
No, courgetti doesn’t taste like spaghetti, but it is a good substitute for pasta as it’s nice and filling. It’s also great swapped in for noodles in asian style salads.
It was about a year ago I started to make courgetti and this is still one of my favourite versions to make. This dish feels like a real treat but doesn’t leave you feeling bloated and lethargic, a healthy comfort food if you will. You don’t need a fancy spiralizer, you can just use a normal grater. Although, Santa was nice to me and bought me a hand held spiralizer which I’m loving.
I love quick and simple recipe that I can just whip up mid-week after a long day at work and this definitely ticks that box! This recipe has only 4 ingredients! 20 minutes from fridge to plate and boom, done. I often make this on a Monday with leftover roast chicken, but you can use breast or thigh too, what ever takes your fancy!

Simple Chicken and Bacon Courgetti
Ingredients
- Approx. 200g of chicken, can be either leftover roast chicken, thigh or breast, sliced.
- 2 x courgettes
- 4 x rashers of unsmoked bacon, sliced
- 3 to 4 tbsp creme fraiche
Method
- Firstly, make your courgetti. I use the hand held spiralizer below (which is no longer stocked), but before I had this (thanks Santa) I used a standard grater. I would lay it on it’s side and swipe the courgette down long ways and this produced good courgetti too.
- Once you’ve got your courgetti ready, fry your chicken in a little oil. Once almost cooked add your bacon to the pan. When this is cooked – I leave it until my bacon has some crispy bits as I love it like that – add your noodles and the creme fraiche. I normally add 3 to 4 tbsp – depends how creamy I’m feeling. I’ve also used natural yoghurt before as this was all I had in the fridge and it was good!
- Stir through and once warm (2 minutes max) serve. You do not want to start cooking the courgette, you just want to warm it through. Otherwise it all starts to go soggy. No one wants a soggy dinner do they? Give it a good dose of black pepper and you’re done! I think this is a great healthy alternative to a heavy pasta. I do love a good plate of pasta but after all the Christmas indulgence this is much needed.
